What Is Blueberry Buckle Cake?

A ‘Buckle’ is a traditional cake that gets its name from its appearance. The weight of the fruit, in this case blueberries, and streusel topping causes the cake surface to ‘buckle’ as it rises. This cake is very similar in flavour and texture to a lemon cake but the added fruit brings forward a punch of flavour and increase in moisture.

Blueberries For Days

I would have to say blueberries are my favourite type of berry. They are completely versatile and can be integrated into almost any recipe. Blueberries are delicious in jams, pancakes, ice cream, cakes, scones, turnovers etc. And the colour – blue, purple, magenta – are truly breathtaking and are especially showcased after baking. Fresh or in season blueberries work best for this recipe; however, frozen ones do not. I recommend to stay away from frozen fruit when it comes to baking in general. The flesh of the fruit changes once it has been frozen and will ultimately add too much liquid to a recipe causing the crumb to be mushy and unappealing.

Blueberry Buckle Ingredients

Like many coffee cakes this cake is made with simple ingredients. Below is a list of what you will need to make this traditional recipe.

Flour – All purpose. Always remember to spoon flour into measuring cup and level off with a knife.

Eggs – 2 whole eggs.

Sugar – Granulated white sugar.

Milk – 2% or whole milk work best for this recipe.

Lemon – Just the zest. The blueberries add a lot of moisture so no need for the juice of the lemon, even though I swear by – if you use the zest, use the juice.

Butter – Unsalted. It’s important to always use unsalted butter when baking in order to have full control over the amount of salt added to a recipe.

Vanilla – Just a little goes a long way. I used artificial vanilla extract for this blueberry buckle, and that’s ok.

Salt – To enhance the flavours and balance the sweetness.

Baking Powder– Helps the batter to rise.

Blueberries – 2 cups to be exact. Make sure they are fresh and washed.

Streusel & Vanilla Icing Glaze

Streusel topping adds an extra layer of buttery goodness that is loaded with flavour and crunch. It is easily made with flour, butter, cinnamon, salt, and brown and white sugar. Vanilla icing glaze is made with 3 simple ingredients – powdered sugar, milk and vanilla. I kept it pretty basic for this recipe as I wanted the blueberries to shine but definitely looking forward to drizzling it with melted white chocolate one day.
