Once upon a time I use to frequent this cute little coffee shop in the neighbourhood I lived in. Every morning on my way to work I would treat myself to a freshly brewed cup of coffee. At some point, not too sure when, they started baking drop biscuits every morning and suddenly I am buying drop biscuits for myself and my coworkers. I would even visit them in the evenings when I would walk my dog in hopes they hadn’t sold out and I could sneak in one more treat before bed. Their selection was tremendous. Sadly, I no longer live close to that coffee shop but I do think about them often and have made it a goal of mine to re-create those drop biscuits.
Rolled Biscuit Vs. Drop Biscuit
Firstly, let’s get one thing clear – they are equally delicious and we don’t discriminate when it comes to biscuits. Now that we got that out of the way let’s talk about their differences. Drop biscuits are made from a wet batter that cannot be rolled or flattened out – it’s just too sticky. Both type of biscuits are leavened with baking powder and are moistened with milk and butter. I find drop biscuit to be more versatile in regards to incorporating other ingredients, making it very easy to make them either sweet or savoury.
Let’s talk about appearance. Rolled biscuits are rolled out, cut into either squares or circles and rise when baking. Drop biscuits on the other hand have a rugged more mound- like appearance and do not rise like the rolled biscuits do. Different but equally delicious.

How To Make Salted Caramel Biscuits
To make salted caramel biscuits you don’t need a lot of ingredients just the usual suspects.
Flour – all purpose flour is my go to and worked well in this recipe.
Baking Powder – helps the batter rise.
Milk – Whole or 2%. For added richness you can also use buttermilk. I have never used a milk alternative but I believe it could work. If you try it please let me know how they turned out.
Butter – Cold and unsalted. Cube your butter first and place it back into the refrigerator. Pull it out when you are ready to use it, you want your butter to be cold cold.
Sour cream – adds an extra hint of moisture and richness. Plain yogurt can also be used as an alternative.
Salt – enhances the flavours and balances the sweetness out. Now because the Sea Salt Caramel Chips are salty, you can (if you must) omit the salt altogether.
Sweetness – I used honey but you can also use sugar, maple syrup or any other sugar alternative.
Salted Caramel Chips – I used the Hershey’s Sea Salt Caramel Chips.
