What Is An Artichoke?

Researching artichokes and their origin was quite an eye opener for me because my entire life I believed they were native to South America and we were the only ones who ate them with the dip. I learned a lot through my research and I will share with you what I learned and how I grew up cooking and eating artichokes. In my home we enjoy eating artichokes during the late spring and early summer months and although my husband argues it’s a lot work for little reward, I am a sucker for them.

An artichoke is a type of vegetable that belongs to the thistle family. It is primarily cultivated for its edible flower buds, which are harvested before they fully bloom. The artichoke plant is native to the Mediterranean region.

The edible portion of an artichoke is the fleshy base of the flower head, known as the “heart,” as well as the tender lower parts of the leaves. Artichokes have a distinctive flavor that is often described as slightly nutty, with a hint of sweetness.

How To Cook An Artichoke

Artichokes can be prepared in various ways, such as steaming, boiling, grilling, or roasting. The leaves are often dipped in sauces or dressings and scraped with the teeth to remove the edible flesh. The heart is considered a delicacy and is highly sought after for its tender texture and rich taste.

Artichokes are not only delicious but also offer several potential health benefits. They are a good source of dietary fiber, vitamins (such as vitamin C, vitamin K, and folate), minerals (such as potassium and magnesium), and antioxidants.

Artichokes are widely enjoyed in Mediterranean cuisine and are used in various dishes, including salads, dips, stews, and pasta sauces. They are also popular as an appetizer or side dish.

Cooking an artichoke can be done in several ways, but one common method is boiling. Here’s a step-by-step guide on how to cook an artichoke using the boiling method:

  1. Start by preparing the artichoke. Rinse the artichoke under cold water to remove any dirt or debris. Cut off the stem, leaving about an inch attached to the base of the artichoke. Trim about half an inch from the top of the artichoke to remove the pointy tips of the leaves.
  2. Fill a large pot with enough water to submerge the artichoke fully. Add salt to the water (about 1-2 tablespoons per quart) to enhance the flavor of the artichoke.
  3. Place the artichoke in the pot of salted water and bring it to a boil over medium-high heat.
  4. Once the water is boiling, reduce the heat to medium and let the artichoke simmer. Cover the pot with a lid and cook the artichoke for about 25-45 minutes, depending on its size. The cooking time may vary, so it’s best to check for doneness periodically.
  5. To test if the artichoke is cooked, insert a knife into the base or a leaf near the center. It should go in smoothly with little resistance or pull a left out, if it comes off easily the artichoke should be ready.
  6. Once the artichoke is cooked, carefully remove it from the pot using tongs or a slotted spoon. Allow it to drain and cool for a few minutes.
  7. Serve the artichoke as a whole. The outer leaves can be peeled off one by one and dipped into your preferred sauce or dressing. Scrape off the tender flesh with your teeth. The heart is the prized part and can be enjoyed on its own or with additional seasoning.

How To Eat An Artichoke With Lemon Dip

To eat an artichoke with a lemon dressing dip, follow these steps:

  1. To eat the artichoke, start by peeling off one leaf at a time from the outer layer. Dip the base of the leaf into the lemon dressing dip.
  2. Hold the dipped end of the leaf between your teeth and scrape off the tender flesh using your teeth and the bottom part of the leaf. The flesh is usually found on the thicker parts of the leaves closer to the base.
  3. Discard the remaining tough leaf and repeat the process with the next leaf. As you work your way towards the center of the artichoke, the leaves will become more tender and meaty.
  4. Once you reach the centre, you will encounter the fuzzy “choke”. Use a spoon or a small knife to carefully remove the choke and discard it.
  5. The heart of the artichoke is reveal once the choke is removed. Cut it into bite-sized pieces and dip it into the lemon dressing for added taste.
