I absolutely love eating anything and everything that is good for me. So when I was introduced to chia seed pudding I was all ears. This is a delicious recipe that is loaded with healthy fats, protein, and fibre. It is light, packed with flavour and can be enjoyed whenever your need a snack or something sweet to satisfy your sugar craving.
So what is chia seed pudding anyway? It is a pudding made of chia seeds and liquid and some added flavour. When added to water or any other liquid the soluble fibre in chia seeds absorb the liquid and begin to swell, resulting in a more gel-like structure. This mixture is what creates the thick ‘pudding’ texture base for this recipe. To make it taste like pudding, this is where the additional ingredients come into play.

Oh how I absolutely love anything that can be made in one bowl! This recipe is exactly just that. As I’ve mentioned before many times throughout this blog, I am an avid chocolate lover so using cocoa powder in the recipe should be of no surprise. Now with that being said, you can skip out on the cocoa powder and keep it simple, or add other flavourings like lemon zest for added freshness or almond extract for the nutty aroma, the truth is the combinations can be anything you fancy.
Let’s get to it. Here are the ingredients you’ll need and a bowl.
Chia seeds – they are small, versatile and incredibly healthy and rich in nutrients! They are full of fibre, protein, minerals, and healthy fats. They are the main attraction so when it comes to this recipe there are no substitutions.
Liquid – regular milk or any non-dairy milk alternative can be used for this recipe. I have made this recipe using regular milk and sometimes oat milk and personally you cannot notice the difference. Some alternatives can be soy milk, almond milk, or coconut milk.
Sweetener – I added maple syrup because I’m Canadian but some other options can be honey, sugar, or agave syrup.
Cocoa Powder – I added cocoa powder because this is a chocolate chia see pudding but you can definitely skip this ingredient all together and just stick to vanilla.
Vanilla extract & Cinnamon – for some added flavour. Don’t skip out on the vanilla but the cinnamon is definitely optional.
Salt – to bring all the flavours together and to balance out the sweetness.
Now that we have all the ingredients sorted out it’s time to discuss how this pudding comes together. As mentioned above the equipment required for this recipe is simply just a bowl and a whisk. Add all your ingredients into the bowl and whisk until everything is well combined, cover, refrigerate and let the chia seeds work their magic. It’s that simple!
How To Store The Best Chia Seed Pudding
Chia seed pudding can be stored in the refrigerator for up to 5 days. You’ll notice the longer the pudding sits in the fridge the thicker it will become so if you want to change the consistency add a bit of milk or milk alternative to loosen it a bit.
