This is an everyday and every meal vegetarian black bean burrito recipe. Loaded with seasoned black beans, cheddar cheese and wrapped in a soft flour tortilla this recipe is everything you want and more from a vegetarian dish. Trust me when I say you won’t even miss the meat.

Burrito translates to ‘little donkey’ which is a fairly cute name and originates from Mexico. I love all things Mexican and the food tops my list. I try my best to incorporate vegetarian dishes to my weekly meal prep and I always gravitate towards burritos because of the simplicity and how delicious they are.

Burrito Extras!

In this recipe I am showing how to make the been base which is perfect on its own with cheese and a side of sour cream. However, burritos come in all forms and you can quickly take it from vegetarian to non-veg by adding chicken, beef, shrimp, pork etc. The meat options are endless. Other extras to consider are rice, guacamole, tomato, lettuce, jalapeño (some form of hot peppers) etc. You can beef up your burrito with as many ingredients as you have on hand.

Black Bean Filling

Black Beans – I used one 540 ml can of black beans I got from the local grocery store. Drained and rinsed. I like the bean base to have some texture so used I my food processor to slightly puree it, still leaving some chunkier pieces for texture.

Tomato – I used 2 medium sized tomatoes, diced. You can also use a small can of diced tomatoes.

Onion – I used one large yellow onion diced into small pieces. 

Spices – salt, pepper, paprika, garlic powder, oregano, chili powder, and cumin.

Cilantro – Yes cilantro and lots of it! Make sure to rinse it thoroughly.

Folding Your Burrito

This is a skill where ‘practice makes perfect’ completely applies, the more burritos you fold the easier it gets. Once you have this down packed you’ll cringe and judge any loosely folded burrito ever again.
