What is a brownie?

As per Wikipedia brownie is a dessert made with chocolate. It is a cross between a cake and a cookie and is normally baked without baking powder allowing it to be more dense and not rise as much. It can be served in squares or triangles and enjoyed mainly as a snack or dessert.

As mentioned before, I absolutely love anything and everything that is made with chocolate so making this recipe was totally my jam. Many brownie recipes are very indulgent and rich in flavour due to their sugar content so because I like my chocolate brownies to be double chocolate I had to reduce the amount of sugar added.

What You Will Need to Make Double Chocolate Brownies

Sugar I use both white and brown sugar for these brownies. Brown sugar definitely holds more flavour and moisture. Make sure to pack your brown sugar in order to press out any tiny air pockets stuck in between the large sugar crystals. This allows you to maximize the amount of sugar used. 

Eggs – Large or extra large room temperature eggs are ideal for this recipe

Salt – The main purpose of salt it to bring all the flavours together, enhance them and balance the sweetness. Remember to reduce or eliminate the amount of salt if you are using salted butter.

Vanilla – honestly, real extract or artificial, they both work very well in this recipe.

Chocolate Chips – I used a semi-sweet chocolate bar for this recipe and chopped it into little chips and chunks. Traditional chocolate chips that come prepackaged can also be used.

Flour – I have always been very loyal to all purpose flour and it has always been loyal to me. Remember not to pack your flour when measuring it out. Packing it will only increase the amount of flour in your recipe causing your brownies to be thick and cakey. We are not doing that here. Olive Oil – if you do not have olive oil you can substitute with vegetable oil 1:1 ratio.

Butter – for added flavour, moisture and texture. Be sure to use unsalted butter for this recipe. If you only have salted butter on hand, reduce or eliminate the amount of salt added.

Cocoa Powder – I used cocoa powder because I wanted that intense chocolate flavour, paired with the chocolate chips we are well on our way to the best brownies ever!!!

How To Make Double Chocolate Brownies

These bad boys are extremely easy to make and like most of my favourite recipes these are a one bowl masterpiece.

  • In a large bowl mix the melted butter and sugar very well until golden yellow.
  • Add eggs, olive oil, vanilla, salt and mix.
  • Sift flour and cocoa powder into the mixture, using a spatula, mix the dry ingredients into the wet ingredients. (sifting your flour and cocoa powder adds air and breaks up any clumps)
  • Fold in 3/4 of the chocolate chips, reserving some to sprinkle on top.

Add ins – walnuts, pecans, almonds, caramel pieces, toffee, marshmallows – the options are endless.

Your batter will be dense and that is exactly what you want. Now when it comes to baking, for the best and fudgiest brownies you will want to slightly underbake them, they will continue baking outside of the oven.

Depending on your pan, I used an 8×8 square baking pan, you will want to tweak your baking time. I baked these for exactly 25 minutes and they turned out perfect. If you are using a larger pan you will want to decrease your baking time and if you are using a smaller pan you will want to increase your baking time (hope this makes sense). Larger pans yield thinner brownies, smaller pans yield thicker brownies.

How To Store Brownies

To store brownies after baking, place brownies in an airtight container or wrap them individually and store them at room temperature for up to 4 days. This will keep them from going stale.
