I can only imagine what you‘re thinking – Green Lentil Soup? Don’t let the name fool you, this soup is beyond delicious and will have everyone at the table asking for more.

I grew up with Green Lentil Soup, it was one of those recipes my mom would whip up in less than an hour. I loved it then and I love it now.
Let’s start cooking!
The base of this soup is quite simple -sautéed onions, carrots, tomato and spices. Add rice, green lentils, water (or broth) and voila you have a hearty soup ready to eat in less than an hour. Seriously though, this green lentil soup is going to blow your mind…poof.
Base – It’s important to sauté the onions, carrots and tomato for a good amount of time. Cooking them slowly will allow the flavours to evolve and sweeten. The spices used are my usual suspects (cumin, paprika, oregano, salt and pepper).
The combination of these spices make everything taste so darn good. They work well in almost any recipe.
Lentils – Green lentils is what I used for this recipe but you can definitely use other lentils as well. Red, brown or yellow are just as good. These lentils will cook and soften just as well as the green ones. Canned lentils can be used as well, they aren’t my first choice but I’m definitely guilty of using them, so no shame in that. It’s super convenient and who doesn’t like convenience. My only recommendation is to use two cans of 540g/19 oz and reduce the liquid by 1 cup.
Liquid – Every soup requires some sort of liquid. You can use store bought or homemade broth but if your base is extremely flavourful, I welcome you to use water – I did.
Rice – I used a regular white long grain rice. It cooks well with the green lentils and will not fall apart. I used basmati rice once and it was a complete disaster! They broke up into micro pieces and completely changed the texture of the soup. If you do not have long grain rice, make sure the rice you choose can hold up to the cooking time and it’s shape.
