Osso buco is an Italian classic and one of my favourites. Traditionally made with braised beef shank and chopped vegetables, this dish is extremely simple and full of flavour, sure to make the entire family excited for dinner.

What is Osso Buco?

Osso buco is well known for being a classic and hearty Italian dish. The name translates exactly to what it is “bone with a hole” which highlights the marrow filled bone in the centre of the cut. The veal or beef shank is a cross section of the leg resulting in a tougher meat that requires a longer cook time under lower heat. There is a lower fat content in this cut but don’t let that fool you, the marrow is everything you need to make this dish rich and flavourful.

How To Make Osso Buco

Making Osso Buco may sound pretty intimidating because of it’s fancy name but I promise it’s extremely easy and you’ll be so proud of yourself after making it.

Meat – Traditionally this dish is made with veal shanks but I used beef. It’s ultimately your preference. I used 2 pieces and this was enough for my family of four. Once you’ve decided on your choice of meat season it with salt and pepper and dredge it with flour. In cooking, dredging means coating your item, in this case your meat, in flour. This will help it create a golden crust and absorb all the flavours during cooking.

Vegetables – In this recipe I used sweet peppers, carrots, garlic and onions.

Liquid Base- I used my homemade tomato sauce (strained tomatoes, olive oil, garlic, and onion), water and red wine. Traditionally white wine is used for this dish but I like to use red wine when cooking with red meat.

Spices – My favourite combination, oregano, salt and pepper.

Side Dish?

This is a very versatile dish and can be served with a variety of recipes. Polenta is my favourite but you can always opt for a warm vegetable such as broccoli, cauliflower, or rapini. Potatoes and rice are another excellent choice if veggies aren’t your thing. If you are planning ahead, make this dish the night before, Osso buco tends to always taste better the next day as it absorbs all the flavours overnight.
