You don’t have to wait until ribfest to enjoy cornbread and all the great things that come with it. Cornbread is a great addition to stews, chili, ribs, brisket etc. and is something you can whip up in minutes. All you need is a bowl, baking pan, whisk cornmeal and some staple pantry ingredients.
I love cornbread! Sometimes I believe there is a southern girl living inside of me. I love everything barbecue, southern, comfort food, smoked and saucy! My fondest memories of cornbread are from hot summer weekends eating ribs, coleslaw and cornbread at the trending Ribfest. Every weekend throughout the summer there is a neighbouring city celebrating Ribfest, where multiple food trucks come together to show off their greatest barbecue treats. It’s a weekend full of great food, live music and memories to last a lifetime. I like to enjoy good food all year long and cornbread is no exception! I am not one to wait around for good food – I will just have to learn how to make it. So let’s get to it. I love my cornbread on the sweeter side, topped with maple butter or a drizzle of warm honey, it’s all a dream come true. If sugar is not your thing you can definitely make this recipe with less sugar or not sugar at all.
What is Cornbread?
Cornbread is a quick bread made with fine or medium ground cornmeal, flour, oil, eggs, baking powder and milk. It’s a one bowl recipe that requires little effort and can come together in no time. With a crumbly and moist texture this bread can be made sweet, plain or even spicy.
How To Make The Best Cornbread
All you need for the recipe is an appetite, large bowl, whisk, cornmeal, some pantry staples and a baking pan.
Cornmeal – this is the main ingredient for this bread! Medium or fine yellow ground cornmeal will give this bread it’s grainy crumbly texture.
Flour – all purpose flour it always my go-to for almost all my baking recipes. You can also use whole wheat for added texture. Remember no to pack your flour when measuring it, spoon into measuring cup and level off with a knife.
Granulated White Sugar – white sugar or brown sugar can be used for this recipe. Brown sugar definitely holds more flavour and moisture. If you are going to use brown sugar make sure to pack your brown sugar, to press out any tiny air pockets stuck in between the large sugar crystals. This allows you to maximize the amount of sugar used.
Baking Powder – leavening agent to help the cake rise.
Egg – This is the glue for the bread, it allows for all the ingredients to bind together. Large or extra large eggs are ideal for this recipe just make sure they are at room temperature.
Oil – A neutral tasting oil works best for this recipe, we wouldn’t want any other flavours to take away from the cornmeal.
Milk – 2 % or whole milk is my go-to. The fat and sugar content of milk adds texture, sweetness and moisture. Just like the eggs, you want your milk to be at room temperature.
Salt – a little goes a long way. The salt helps to balance out the flavours.
How To Measure Your Flour
The best way to avoid packing your flour is to scoop/sprinkle it into a measuring cup – allowing air to flow into it. Scoop enough flour to overflow your measuring cup and level it off by scraping the excess off with a knife.
How To Store Your Cornbread
Cornbread can be stored in an airtight container in room temperature for a couple of days. If you wish to store long, you can refrigerate for up to 4 days.
