Start with Some Flavour!
Turkey is a very versatile protein and when seasoned and cooked right you have a delicious and flavourful meal. In this recipe I sauté the base of the turkey burger first before combining and forming my burger rounds. Turkey meat can be dry at times so it’s important to add flavour every step of the way. The base holds the same concept as a sofrito but in this case I used bell peppers, carrots, onions and seasoning. It’s amazing how I never thought about doing my beef burgers the same way, the end product is so juicy and aromatic.
Turkey Burger Base
Onion – I used two small yellow onions (or one large) diced finely. I cried a lot when dicing these bad boys.
Bell peppers – Green and red are always my go to but I have also used orange and yellow, essentially I use what I have in the fridge.
Carrot – One medium and grated finely.
Spices- Paprika, cumin, garlic powder, salt and pepper. I also added balsamic glaze to sweeten the base. You can omit this all together or substitute with honey.
Extras!!
I get so excited about extras when it comes to these turkey burgers, you can essentially load it with anything and it will be just as divine. Something about cooking with turkey that always makes me want to incorporate something sweet, reminds me of Thanksgiving dinner and how the cranberry sauce brings all the flavours together.
For this recipe I chose to use apple slices, red cabbage slaw (from my Ultimate Fish Tacos recipe, minus the onions) , and pickles! I adopted this combo from a salad I ate many years ago at this quaint little bistro on the east side of Toronto, it was garnished with apples and pickles and was so delightful.
Turkey Burger Formation!
It’s time to combine all the goodness and makes some turkey burgers. Once the base has cooled, combine the turkey, base and cheese (cheddar or mozzarella) – just one more element to bring these from basic to awesome. This recipe yields 10 small burgers, 9 cm in diameter, 2 cm thick.
